Not the Olympics, but recently the opening ceremony of the 1991 World Student Games a.k.a. Universiade in Sheffield was uploaded on YouTube. Apart from the three London Olympics and the handful of Commonwealth Games held on British soil, it was the biggest international multisport event to be held in Britain. (And apparently this ceremony wasn't televised.)
