I'm guessing it was so she stood out more when people were discovering her as if you just searched "pink" it's going to give you stuff about the colour rather than the singer. There's maybe copyright issues attached too, I'm not sure its ever something she's spoken about but I could be wrong on that. She was marketed as sort of "alternative" pop in the early days so it makes sense to have her name written in a way that's a little edgier and against the norm (replacing the i with an !)

The name 'Pink' had been following her around since she was a kid from different places and meanings. When the movie Reservoir Dogs was released she says she was like the character 'Mr Pink' (she has a Mr Pink tattoo on her inner thigh).

 

I think the story goes that she wanted her stage name to be Mr Pink but couldn't because of copyright reasons, so she changed it to Mr P!nk which eventually became P!nk
