with witcher I have it but I feel wrong starting with #3 and I tried #1 and that one is bad but I'm sure #3 is good and also it seems like a huge time sink

By all means start with #1 because, objectively, #2 at least is just #3 but a bit worse in every aspect. So it's far less satisfying playing the sequels after #3.
